45 ml Wild-Arbor Clear Cream Liqueur
45 ml Citrus Vodka
45 ml Cranberry Juice
15 ml Lime Juice

Egg White from 1 egg


1. Place your vodka, Wild Arbor, and half your lime and cranberry juice into an ice filled shaker.
Shake until well chilled. Pour into a chilled coupe glass.

The Foam;

Don’t be overawed by the foam preparation. The main thing is to shake, and shake. Then shake some more. Egg foams are the standard when it comes to cocktail foams, they are the most common and most bartenders have experience making them. The typical technique is to add an egg white*. In this case combine the egg white to half your lime and cranberry juice. Everything then needed to stabilize a foam is already in your mix so shaking (furiously!), with no ice, will create a good foam.

Once you have your foam ready, float it gently onto the top of your cocktail creating a good head.

There are also foam makers on the market that use CO2 cartridges. So, take this opportunity while Santa’s whispering sweet nothings in your ear to put a word in for next Christmas.

*For Vegans there is a product available on the market called Foamee, this replaces the need for egg white.
